If you can believe it, I made this recipe at the insistence of my son after he watched the movie Ratatouille. Turns out we really like it!
2 cups eggplant (cubed, peeled)
1 zucchini or yellow squash (washed, cut in half and then 1/4 inch slices)
1 can tomatoes with juice
1/2 cup onion (chopped)
2 Tablespoons of olive oil
1/2 teaspoon dry basil
1/4 teaspoon garlic salt
1/8 teaspoon pepper
Combine everything in a large skillet, bring to a boil then cover and simmer 20 minutes. Uncover and cook for 5-10 minutes more (until desired consistency). I like to serve it over noodles and sprinkle with cheese (Parmesan and/or mozzarella).
