Ratatouille

If you can believe it, I made this recipe at the insistence of my son after he watched the movie Ratatouillesquare foot gardening . Turns out we really like it!

2 cups eggplant (cubed, peeled)
1 zucchini or yellow squash (washed, cut in half and then 1/4 inch slices)
1 can tomatoes with juice
1/2 cup onion (chopped)
2 Tablespoons of olive oil
1/2 teaspoon dry basil
1/4 teaspoon garlic salt
1/8 teaspoon pepper

Combine everything in a large skillet, bring to a boil then cover and simmer 20 minutes. Uncover and cook for 5-10 minutes more (until desired consistency). I like to serve it over noodles and sprinkle with cheese (Parmesan and/or mozzarella).

    Aw, my sister (now deceased) used to make this. I used to love it and ask her to make it whenever we were doling out jobs for get togethers. I think I might have to make it for the memories. Thanks

    That sounds dee-lish! My son wanted me to make it too after seeing the movie, but unfortunately, he wants it to look EXACTLY like the one in the film. Uh, not gonna happen!!! Enjoy and thanks for sharing the recipe. I’m gonna give it a go!
