Spicy Sweet Potato Hash

This Spicy Sweet Potato Hash recipe was originally posted on my blog earlier this year. It is a quick and easy breakfast that packs a big protein punch to get you going in the morning. I LOVE spicy foods, but if heat isn’t your thing, simply omit the chopped chipotle peppers from the recipe.
Spicy Sweet Potato Hash
Serves: 4

Ingredients
2 tbsp olive oil
1 lb ground beef
2 medium sweet potatoes, shredded
1 chipotle pepper in adobo sauce, finely chopped
1 medium yellow onion, finely chopped
1 tsp paprika
1/2 tsp cumin
Salt and pepper to taste
Directions
-Heat olive oil in a pan over medium heat
-Add ground beef to pan and brown, stirring often to break it up as it cooks (about 5 minutes)
-While beef is browning, mix shredded sweet potato, chipotle pepper, onion and spices in a bowl
-Add sweet potato mixture to pan with ground beef and continue to cook until sweet potatoes begin to get crispy (8 to 10 minutes)
Have you ever made this vegetarian before, perhaps substituting eggs for the ground beef?
My husband’s family isn’t really into spicy food so we always try to have a light hand with the peppers when we are cooking for them. You could substitute another spice, such as clove, garlic or maybe oregano and thyme and go for a totally different flavor!
I’m often cruising the web to see what others are creating with potatoes and sweet potatoes. This recipe sounds wonderful and I can’t wait to try it! I may cut back a bit on the peppers…we’ll see. I like spicy food but my Norwegian husband is a bit skittish about it!
